Who loves goat cheese, I love goat cheese and my stomach loves goat cheese. I say that because I can’t digest cow dairy. I just get bad indigestion and other symptoms. But goat cheese I can do. Apparently it has less lactose than cow dairy products and easier to digest. If you have a severe dairy intolerance you might not be able to tolerate goat products either. Everyone’s different, so listen to your body.
What I did for this recipe is I chose a plain spreadable goat cheese. One tub was about 175g, I chopped 2 tbsp of tarragon. Tarragon is a very mild herb that won’t overpower the flavour of the goat cheese. Feel free to adjust the amount to your liking. I mixed the goat cheese and tarragon together with a 1 tsp of lemon juice and 1 tbsp of olive oil, some fresh cracked black pepper to taste, and that’s it. Easy or what? You can serve it with your favourite veggies, cucumbers, any colour of bell peppers, mushrooms, celery or some crispy flat bread, it’s your choice. This is an amazing snack for the spring or summer, light and healthy. Enjoy.
