Easy and healthy tarragon goat cheese, veggie spread

Who loves goat cheese, I love goat cheese and my stomach loves goat cheese. I say that because I can’t digest cow dairy. I just get bad indigestion and other symptoms. But goat cheese I can do. Apparently it has less lactose than cow dairy products and easier to digest. If you have a severe dairy intolerance you might not be able to tolerate goat products either. Everyone’s different, so listen to your body.

What I did for this recipe is I chose a plain spreadable goat cheese. One tub was about 175g, I chopped 2 tbsp of tarragon. Tarragon is a very mild herb that won’t overpower the flavour of the goat cheese. Feel free to adjust the amount to your liking. I mixed the goat cheese and tarragon together with a 1 tsp of lemon juice and 1 tbsp of olive oil, some fresh cracked black pepper to taste, and that’s it. Easy or what? You can serve it with your favourite veggies, cucumbers, any colour of bell peppers, mushrooms, celery or some crispy flat bread, it’s your choice. This is an amazing snack for the spring or summer, light and healthy. Enjoy.

      • I love mini stuff too, it’s so fun to eat. I saw your tomato plants sprouting. That’s so great, and you have cucumbers too? yummy! Our spring is a bit late this year up in Canada, but i saw some chives sprouting in my garden the other day. Yey signs of life. Can’t wait to plant some veggies too and I’m looking forward to seeing your veggies all summer :)

      • yes, ma’am. i planted yellow cucumbers, too – both sprouts are looking amazing! i will post updates soon – i will most likely transplant them into a greenhouse this weekend. it’s been cold here, but my landlord has the setup indoors to get sprouts going, so i’m fortunate to have had some success so far – despite the cold temps! i heart canada, and maybe some day hope to live there! :D

      • Sounds like a nice set up with your plants. :) You’re in Colorado right? Saw the mountain pics and river pics so beautiful. Canada is very friendly if you come to live here we’ll welcome you with a smile. And we do say ‘eh’ a lot LOL ;)

      • i am in colorado, yes – but i have considered making my way to your neck of the woods someday soon :) it’s lovely here, no doubt – but i’ve always been curious about canada :)
