Smoked Polish Sausage Quinoa with Dijon Mustard Dressing

Everyone knows quinoa is high in protein and favoured by vegetarians and celiac but it is very versatile and can be used in so many ways. Here’s my super easy Smoked Sausage Quinoa and Tomato Salad with Dijon Dressing.

Here’s what you’ll need


1/2 cup of quinoa, rinsed.

Cook quinoa in 1 cup of water until all water is absorbed, set aside and let cool.


1/4 cup of diced smoked Polish sausage, I like Krakowska (should be available in any Polish deli) as it is the leanest one I’ve seen. (Check the ingredients it may not be gluten free)


1/2 of a medium tomato, diced


1 tbsp chopped parsley


1 tsp Dijon mustard
1 tbsp extra virgin olive oil
1 tsp lemon juice

Whisk together.

Combine all ingredients in a bowl and enjoy. Super easy and so great for lunch.
