Cucumber & green onion salad with my grandma’s creamy lemon dressing

I picked some fresh cucumbers and green onions from my veggie garden today and was feeling a little nostalgic, so I decided to make my grandma’s cucumber salad. (aka Mizerja, [mee-zer-ya] in Polish)

This very simple recipe is quick and tasty and so refreshing on a hot summer day.

What you’ll need:

2 medium cucumbers or 3 small ones
1 green onion
salt/pepper to taste
Dressing:
1/2 cup of light sour cream (some brands may add gluten, Celiac’s please check)
1/2 cup of 2% milk
2 tbsp of lemon juice
a pinch or 2 of sugar

What to do:
Peel the cucumber, and using the slicing side of a cheese grader, finely slice the cucumbers.
Chop the green onion.

Combine the ingredients for the dressing in a coffee creamer dish, and whisk together.

cucumbers_agnes_borowik-8Plate the cucumber slices, sprinkle with chopped green onion, (season with salt and pepper if desired) and drizzle the desired amount of dressing over top.

This simple salad is a great pairing with mashed potatoes and pork chops (a traditional Polish dinner which I grew up on), or with some grilled salmon or chicken breast. I also like to have it on it’s own sometimes. Play around with the lemon juice to sugar ratio. If you like the tartness of the lemon, add some more lemon juice to the mixture. If you prefer a sweeter taste, add a pinch more sugar. There really is no going wrong with this dressing. Have fun and enjoy.
