Yellow tomatoes are ripening very quickly in my veggie garden, so quickly that every day I come up with new recipes to use them in. Today I decided to make this very simple and quick and healthy lunch.
What you’ll need:
4 medium yellow tomatoes (you can easy do this with red ones)
1 can of light flaked tuna, water drained
1 tbsp of low fat mayo (some brands may contain gluten please check)
1/4 tsp of smoked paprika
1/2 tsp of lemon juice
1 tsp of chopped parsley
salt/pepper to taste
What to do:
Cut the bottoms off of the tomatoes so they can sit flat on a plate and not topple over. Cut the top off of the tomato as well parallel to the bottom. Scoop out a portion of the inside of the tomato into a small bowl. Add the tuna, mayo, paprika, lemon, salt/pepper and chopped parsley to the tomato insides you’ve scooped out (by using this portion of the tomato you reduce the amount of mayo needed to keep the tuna nice and moist, therefore lower calories and fat.) Mix ingredients together, and scoop into the partially hollowed out tomatoes. Sprinkle with paprika and some chopped parsley as garnish. Enjoy them on their own, with your favourite slice of bread or even just a few crackers.
