Lately I’ve been craving bitter-tasting veggies, I’m not sure why, but I love rapini, endive and my favourite (must be the purple colour) radicchio.
This super easy 5 ingredient salad is so tasty it’s a feast for your eyes and your mouth.
What you’ll need:
1 medium radicchio1 cara cara orange (or your favourite kind, make sure it’s seedless)
3 tbsp of crumbled herb goat cheese
3 tbsp of extra virgin olive oil
3 tbsp of balsamic vinegar of Modena
Makes 2 servings.
What to do:
Cut the radicchio into wedges and separate the leaves. With a paring knife, slice off the peal of the orange, and cut out the orange segments. Place 1/2 the amount of the radicchio on a plate, and 1/2 the segments over top. Crumble 1/2 the amount of goat cheese, drizzle 1.5 tbsp of olive oil and balsamic over the top of the salad. Do the same to the second portion. Enjoy the salad with some gluten-free crostini or a slice of crusty bread.
