December marks the start of Holiday entertaining for a lot of us and a busy time of year. Hosting a get-together can be time-consuming, tiring and stressful.
Being a fan of shrimp, I love how they thaw quickly, are simple to use in many dishes and cook in a flash. This shrimp appetizer is so simple and tasty your guests will be talking about it for days, and no doubt will want to add to their entertaining menu.
What you’ll need
20 shrimp, thawed and deveined
1/2 pack of brown rice spaghetti (gluten-free) (or regular spaghetti)
1/2 cup of light olive oil, divided
1/4 cup of fresh squeezed lemon juice
1 large clove of garlic, minced
Pinch of fresh ground salt and pepper
Parsley and lemon wedge for garnish
What to do
In a bowl combine 1/4 cup of olive oil, lemon juice, garlic and salt and pepper, add shrimp and combine. Let marinate for 15 minutes. In the mean time boil spaghetti according to package instructions and strain. Take 6 strands of spaghetti and wrap around the shrimp, set aside. Repeat step with all the shrimp. Pre-heat your non-stick pan on medium-high heat, add a little light olive oil and sautée spaghetti wrapped shrimp for about 1.5 – 2 minutes on each side.
Remove from pan on to a serving dish, sprinkle with chopped parsley and a squeeze of lemon juice.
Serve them warm right out of the pan, your guest will simply love these. Enjoy.
