Great way to add flavour to your pork chops and reduce grilling time is to stuff them. Using a simple method of cutting the chop and creating a pouch will not only seal the flavour in, but also reduce the grill-to-table time. I decided to stuff my Organic pork chops with sun-dried tomato and garden fresh oregano.
What you’ll need
3 organic pork chops
1/3 cup sun-dried tomatoes
3 tbsp of fresh oregano, chopped and drizzled with olive oil
salt and pepper to taste
paprika to taste
What to do
Make an incisions on the side of the chop and cut until you have a pouch. Do not cut to the edges. Season the outside with salt, pepper and paprika. Divide the sun-dried tomatoes and the oregano mixture into 3 portions. Stuff the chops with the sun-dried tomatoes and oregano and set aside. Preheat the grill to about 350-400°F and grill for about 4 minutes on each side or until the inside of the pouch is barely pink. Remove from heat, serve immediately.
Serve with some fresh local grilled asparagus. Simply drizzle olive oil, sprinkle with a pinch of salt and fresh ground pepper, and grill until desired tenderness. Enjoy.
